COCONUT STACK

How many times have you walked past a fallen coconut and left it alone? Well don't! Grab that fury nut and take t home to create this delicious and super easy coconut stack using pretty much just the coconut.

 

RECIPE

Serves 4-6

  • 2 Coconuts (not too young; you need the flesh)

  • 1 cup of coconut milk/cream. (You can blend the milk with some flesh  and create your own, or just use a can).

  • 1/2 cup of coconut oil. (Again, you can boil your own up from the flesh or just use some from a jar). 

  • 1 tablespoon of Cacao (Powdered)

  • A couple of pinches of salt

  • A scrape of vanilla

  • A tablespoon of arrowroot powder (Arrowroot grows everywhere in the Seychelles so you can easily make your own, or use from a package). You could also use 1 large tablespoon of tapioca flour or equivalent thickener,

  • Anything else you have lying around; Grounded up. (e.g. flax seeds, chia seeds, nuts, etc.)

 

METHOD

Step 1: Heat oven to 200C/fan 180C/gas 6.

Step 2: Open and grate the coconut, reserving the milk). Check out or video on how to open a coconut.

Step 3: Place half of the grated coconut on a baking sheet and place in the oven for around 10 minutes, or until a little crispy (but not burnt).

Step 4: If creating your own coconut milk, use some of the flesh and the milk to make. If not then add the remaining coconut into a pan with the coconut milk, vanilla, a pinch of salt and warm. Mix the arrowroot with a splash of water and then whisk in. Heat until thickened. Place in fridge to cool. 

Step 5: Take the coconut out of the oven and exchange to a bowl. Mix in a tablespoon of coconut oil and any leftovers (Chia seeds, etc.). Mix and then press into a baking sheet lined dish. We use a 20cm diameter one. Place in fridge to cool. 

Step 6: When both previous dishes have cooled, warm up the remaining coconut oil and mix in the cacao and a pinch of salt. Place in the fridge to cool so that its starts to solidify slightly. Scoop the wet coconut mix from the fridge on top of the dry coconut mix and then quickly whisk the chocolate source and poor on top. Place back into thee fridge for at least 10 minutes and then enjoy. 

Step 7: Take all the praise for creating such a delicious dish.
