GLUTEN FREE / VEGAN / ORGANIC SCONES RECIPE
This is a simple recipe that we use to create some delicious and healthy treats for our kids
Makes 6 Scones
2 cups of Organic Gluten Free Flour. (See our section on homemade flours). Or a store bought flour. We like STC's.
1/4 Tablespoon of foraged sea salt or Organic Himalayan Salt
1/4 cup Homemade Organic Coconut Oil
1/4 teaspoon Organic Baking Soda (See our "Why we don't use Baking Powder" blog
1 Tablespoon of Homemade Organic Apple Cider Vinegar (Or Store bought - See below for our favourite)
2 Tablespoons of Organic Coconut Sugar
1 or 2 pods of locally sourced Organic Vanilla
1/2 Cup Homemade Organic Coconut Milk (See our "How to make your own coconut milk" page
1/4 Cup Homemade Organic Raisins (You need a dehydrator and a grapevine for this)
Step 1: Heat oven to 220C/fan 200C/gas 7.
Step 2: Mix all the dry ingredients into a bowl (aside from the Baking Soda).
Step 3: Combine the Baking Soda and Apple Cider Vinegar and mix into the dry ingredients.
Step 4: Add the Coconut Oil, then rub in with your fingers until the mix looks like fine crumbs. Stir in the Coconut Sugar.
Step 5: Pour in the Coconut Milk and Vanilla and gently combine.
Step 6: Scatter some flour onto the work surface and tip the dough out. Flour the dough and your hands then fold the dough over 2-3 times until it’s a little smoother. Pat into a round about 3cm deep.
Step 7: Take a cookie cutter or a whiskey glass and press into the dough. Reshape the leftover dough and press another 1 or 2. You may need to shape the last with your hands.
Step 8: Bake for 10 mins until risen and eat just warm, generously topped with some homemade Organic Jam and Organic Coconut Cream
