GLUTEN FREEÂ / ORGANIC PANCAKES RECIPE
This is a simple recipe that we use to create some delicious and healthy pancakes with our kids
RECIPE
Makes 4 - 6 Pancakes
1/2 cup of Organic Gluten Free Flour. (See our section on homemade flours). Or a store bought flour. We like STC's.
1/4 Teaspoon of Organic Himalayan Salt
2 Organic Free Range Eggs (See our flax seed egg substitute for vegan option)
1 Tablespoon of Organic Coconut Sugar
1/4 cup Organic melted Butter (or Organic Coconut Oil for vegan option)
1/2 Teaspoon Organic Vanilla
1/2 Cup Organic Coconut Milk (See our "How to make your own coconut milk" page
1/2 - 1 Cup of distilled water (depending on your preference for thickness)
A pinch of Organic Cinnamon
Filling (whatever you like)

METHOD
Step 1: Put all your ingredients into a bowl and get the kids mixing

Step 2: Set aside for as long as you can hold them off

Step 3: Set your frying pan on a medium heat and add a splash of coconut oil.
​
Step 4: When hot, add a ladle of pancake mixture, swirling it around the pan so as to ensure it covers the whole area and is paper thin.
​
Step 5: Cook for a minute and then attempt an impressive flip to show off to the kids.
​
Step 6: Revert back to Step 4 if you drop the pancake on the floor.
​
Step 7: Cook to your desired crispiness. (our kids like crispy edges) and serve with your choice of toppings. (We love organic bananas and homemade peanut butter, or a homemade organic berry compote, or sometimes just a squirt of freshly picked lemon.

Step 8: Make another as one is never enough.
